Anyone have a good vegetable soup recipe? or no of any good sites with soup recipes?? thanks?

Veggie soup is a no brainer. First decide if you want chicken stock or veggie stock. You can either buy it or make it. So lets assume you have your pot filled with stock water, here is what I would put in





Chopped carrots, celerey, potatoes, zuchinni, beans, onion, peas, green beans, kohlrabi, canned tomatoes. If you want a think soup, let this simmer away for an hour or so. If you want a thick soup, just take some soup out, blend it, then put it back in the pot. You could also mix cornstarch with broth and put it back in, bring it to a boil and stir until thick. I have a brilliant vegetable soup which I made when I had a small coffee shop in a small village in Greece. Everybody loved Greeks, English,Germans, French, Italians and all other tourists that came to our village. I was fortunate, of course, to have all the good seasonal vegetables available and every time I made the soup something else would come in season and it was a question of adding or omitting accordingly.





You will need a good variety of seasonal vegetables and as many different colours you can get for example, the green and white of the leek is good, spring greens, carrots, celery, cauliflower, broccoli, onions,a few potatoes, a handful of rice (I do not use corn but you can if you wish) Wash and Chop all the vegetables put them in a saucepan and cover with water add salt and bring to boil and simmer until cooked, adding more water if necessary, add more salt ground black and red pepper if you have mustard seeds add them to the pot at the beginning of the process if not you can add a couple of teaspoons of mustard powder. When all is cooked add half a cup full of olive oil and the juice of one lemon, once the heat is turned off. This replaces stock and makes the soup tasty. LEEK %26amp; POTATO SOUP





Serves 2





INGREDIENTS





250g of leek


250g of potato


1 tablespoon of oil


400ml of water


1 vegetable stock cube


录 of a teaspoon of ground pepper


100ml of milk





METHOD





Wash the leeks and chop the bottom off, then chop them (see below) into 1cm (陆 inch) pieces. Peel the potatoes and chop them into 1cm (陆 inch) cubes.





Put the oil into a saucepan on a medium heat. Add the leeks and fry them for about 10 minutes. Stir frequently to stop them sticking or browning.





Add the water, stock cube and pepper. Stir thoroughly.





Bring to the boil, then turn down the heat until it is just boiling (simmering). If you want the potato to stay chunky, cook for about 15 minutes until the potato is just soft. If you want to mash the potato, cook for about 20 minutes.





If you have a food processor, put the soup in it and blend it to the desired consistency. If you have a hand blender, put it in the soup and blend it to the desired consistency. If you don鈥檛 have a food processor or hand blender, use a potato masher, press the soup through a sieve with the back of a spoon, or leave it lumpy.





Just before serving, add the milk and stir thoroughly.





ADDITIONS %26amp; ALTERNATIVES





Add a clove of garlic or 陆 an onion, finely chopped, at the same time as the leeks. Substitute the milk for cr猫me fra卯che or single cream.





TIPS





The easiest way to chop leeks is to slice each one lengthwise into four (which makes it look a bit like celery) and then chop them from top to bottom.

A pint and a half of stock, veg or chicken


Salt and pepper





Cut the leek up into small pieces, cook in the stock, salt and pepper for 20/30 mins on a medium heat.





A bit more to do,


Leeks, onion, potatoes. stock and milk


Season to taste.


Lightly fry the veg, add the stock and cook for 20 minutes until the veg is soft. Stir in the milk and serve with crusty bread.


You can serve the soup lumpy or liquidise it.
Brown mild bulk Italian sausage. Add beef broth, water, V8 juice, celery, onions, carrots, potatoes. Add garlic powder, lots of fresh basil, and some sort of pasta (elbow mac?) but add the pasta for the last 15 minutes of cooking. Simmer for a couple of hours and enjoy. This is quite good.
I was cooking my veg soup at a workshop and a young lady gave me a hand with preping the veg and she chopped up some Horse Radish it gave the soup a real kick but every one enjoyed it,so thats my tip not to much or it could blow your head of.
All mix vegetables mix them in boiling hot water first. When they are done put the vegetable stock in the vegetables of you want to spice the soup up put what ever spices you want in it and blend the soup in a blender.
Here are a bunch, in order from 5 Star to Not Yet Rated. All vegetarian though.
