I am looking for a healthy and not so spicey Black Bean Soup recipe?

I have acid reflux and irritable bowel syndrome. I cannot eat anything spicey or with any kind of peppers in it. Can I make a vegetarian Black Bean soup that tastes good without tomatoes, cayene, or anything else spicey or highly acidic? I can eat onions and garlic just no tomatoes, peppers, or chili powder.I am looking for a healthy and not so spicey Black Bean Soup recipe?
BLACK BEAN SOUP





1 lb black beans, soaked


8 cups water


1 tablespoon kosher salt


1 cup onion, chopped


1 cup celery, chopped


1 cup carrots, chopped


8 tablespoons olive oil


6 garlic cloves, peeled


1 1/2 teaspoons cumin (or to taste)


4 teaspoons white vinegar





Simmer beans in water until soft. Saut茅 onion, celery and carrots in olive oil until the onions turn golden brown. Add garlic, cumin and vinegar. Cook, stirring for 3 minutes. Drain about 1/2 cup water from beans and add it to the saut茅.


Cook over low heat for 30 minutes.





Combine vegetables with beans.





Cook for another 30 minutes, adding more water if necessary





OR





BLACK BEAN SOUP





1 can black bean soup


1 can stewed tomatoes


1 can mushroom soup


1 c. heavy cream


2 c. steamed leeks


Salt %26amp; pepper to taste


1/4 c. sherry


1 can beef broth


Marjoram


3 garlic cloves


Garnish: grated Jack %26amp; diced red onion





Puree all ingredients except cream. Cook 20 minutes over medium heat. Add cream and cook 10 minutes more. Let ';rest'; overnight before serving. Freezes well.





OR





BLACK BEAN SOUP





4 thick slices bacon (chopped)


2 stalks celery (chopped)


3 onions (chopped)


1 lb. black beans (soaked overnight and drained)


1 ham bone


2 bay leaves


2 cloves garlic (pressed)


1/2 tsp. cayenne pepper


2 cans beef broth


6 cans water


Salt and pepper to taste


8 lemon slices for garnish





In a heavy saucepan, saute bacon pieces until lightly browned. Add celery and onions and saute for 3 minutes without browning. Add remaining ingredients. Combine well and bring to a boil.


Simmer low about 2 1/2 hours, stirring occasionally. Remove meat from bone and discard bone. Cool the soup. Put through blender. Reheat and serve with lemon slices on top.





OR





BLACK BEAN SOUP





1 lb. dry black beans


1 1/2 lb. smoked sausage, in 1/4 inch slices


3 med. onions, chopped


2 bell peppers, chopped


2 cloves garlic, crushed


Salt and pepper to taste


2 tbsp. wine vinegar


2 tsp. Worcestershire sauce





Soak beans overnight. Drain and rinse. Slowly brown sausage in large soup pot. Add all vegetables, saute until onions are clear. Add rinsed beans to pot. Cover with fresh water, bring slowly to gentle boil. Reduce heat to low, cover and simmer until beans are done (not mushy) about 2 hours.


Adjust salt and pepper to taste. Serve over hot rice, cooked in separate pot. Serves 8 to 10. Freezes well. NOTE: It is impossible to use too much sausage, too many onions, or too much garlic.





JMI am looking for a healthy and not so spicey Black Bean Soup recipe?
I have an easy black bean soup recipe.


Heat 32 oz of vegetable stock with 2 cans of black beans rinsed well, add a Tablespoon of cumin. I would add onions and garlic for flavor. I use a jar of salsa with the above and process all in a blender to puree. Serve with sour cream, cheese of your choosing and crushed fritos. If you want some texture to your soup, ladel out some before processing into a puree. I have never made it without the salsa so I could not guarantee the results I get.


Adding onions and garlic should help with the flavor. Good luck.
