Any one got a good pumpkin soup recipe?

Im looking for a good pumpkin soup recipe, im using butternut pumpkinAny one got a good pumpkin soup recipe?

This soup is simply beautiful. I have prepared this soup many times and is always a hit!. Some people dont eat pumpkin for some reason, well if you try this recipe-im sure you'll make it again. Enjoy


1 onion


1 clove garlic, chopped


2 1/8 ounces butter


35 1/3 ounces pumpkin, diced (Peeled)


1/16 teaspoon sugar


1/16 teaspoon nutmeg


1 teaspoons curry powder


1 bay leaf


4 1/4 cups chicken stock


2 1/8 cups milk


1/2 cup cream








1. Saute onion and garlic in the butter until soft.


2. Add pumpkin, sugar, nutmeg and curry.


3. Add stock and bayleaf.


4. simmer for 30 minutes.


5. Remove bayleaf.


6. Puree in blender (Hand held blender is fine) with milk.


7. Season to taste and finish with cream and chives.

Take a pumpkin, cut it in to pcs, put in water, boil it to 100oc. Add salt to taste
This is so easy it's scary but very tasty! Peel and dice into cubes one whole butternut pumpkin (best because it is sweet) but not the seeds of course. Dice 1 onion and gently fry in a large saucepan with a little olive oil for a couple of minutes. Then add 1 litre of chicken stock made with stock cubes and water or with the Real Stock stuff. Then add diced pumpkin and boil for about 20-25 minutes. Once the pumpkin is soft, blend in a blender or with one of those hand held thingies. Ladle into a bowl and swirl in about a tablespoon of cream to make it look fancy. Good luck!
