Lentil Vegetable Soup





2 Cups Dried Lentils (Picked Over and Rinsed)


1 Cup Large Onion (Chopped Finely or Pureed)


6 Stalks Celery (Chopped Finely or Pureed)


3 Carrots (Diced)


1 Can (1 lb) Stewed Tomatoes


1 TB Mixed Herbs (Parsley, Oregano, Rosemary, etc.)


1 tsp Garlic Powder


Ground Pepper to Taste


A Few Sun Dried Tomatoes, Minced


1 Package Onion Soup Mix (Optional)


Water


8 ounces Fresh or Frozen Large Cut Spinach


Hot Sauce (Optional)





Place the lentils, onion, celery, carrots, tomatoes, herbs, garlic powder, pepper, sun dried tomatoes, and soup mix in a large soup pot.





Cover with water and simmer for one hour until lentils are tender.





Add spinach and hot sauce and cook for another 10 minutes or until spinach wilts.Please share your favorite bean and veggie soup recipe with me?
Saute chopped onion and garlic in olive oil. Add shredded cabbage, shredded carrots and string beans cut into 2-inch pieces. Add water and bring to a boil. Season with salt, pepper, and sesame oil. Put in tofu cubes and cornstarch dissolved in water. Top with spring onions and chives.
This might be a basic reciepe because Im new to veganism and not much of a cook, but i made it the other day it waqs really yummy:


1 large can of v8


chop up 1 large potatoe


1 white onion


about a cup of carrots.


throw them all in the pot and a can of kidney beans. cook about a hour or until the potatoes are soft.


add salt and peppper!! YUMMY!!!

Ever had Dal? Its very similar, but Indian
eek, I'm not liking the look of some of these recipes so far. Here is a recipe for a FANTASTIC tortilla soup....feel free to modify it any way you like...I have already changed it a lot seeing as how the original recipe called for chicken.





zucchini, onions, bellpeppers...as much as you want and any other veggies that sound good....just cook them up a bit in the soup pan


then add...


1/2-1 cup frozen corn


1 can of re-fried beans (vegetarian of course)


1 can of black beans


1 cup salsa


1-1 1/2 cups water


(maybe some taco seasoning if you think it lacks flavor)


simmer all of that for about 10 minutes...until the re-fried beans are well stirred up with the rest...and until your veggies are soft enough...I also like to cook it down a bit so that its more of a thick stew rather then a liquid soup.


Then stir in cheese...original recipe says 2 cups...i only use about 3/4 of a cup (to cut down on calories).


Then dish it up and crumple some tortilla chips inside...it is sooooo good! It is very easy to make and is great leftovers.
Take your regular recipe and add some liquid smoke to it and a couple of ham hocks and simmer it slow and long in a crock pot. It is absolutely DELCIOUS and really spices up an old recipe.
