I'm looking for a simple soup recipe that is flavorful, and serves two people... any suggestions?What is a simple, yet tasty, soup recipe for two?
Tomato - Rice Soup
2 cups chicken broth
1/2 cup long grain rice(or Minute Rice)
1 14 oz can diced tomatoes
1 small onion, diced
Put everything into a pot and simmer for 1/2 hour. Salt and pepper to taste.What is a simple, yet tasty, soup recipe for two?
I like onion soup. You slice a large onion. Cook in olive oil until onions are tender. Sprinkle a little bit of sugar on top while onions are cooking. Then add broth. I like to use onion soup broth. Put your soup in a oven safe bowl, put jack or mozzarella cheese on top and broil in the oven for 3 minutes. Yummy.
chicken corn soup.
1 cup cooked chicken
1cup whole kernel corn
2tsp chicken stock- powdered
4 cups water
1 egg beaten
1 spring onion chopped
1 tablespoon cornflour
simmer chicken, corn, stock together in water for 20 minutes.
add beaten egg slowly dribbling it into the mixture
mix the cornflour in 1 tablespoon water and add to soup.
season with chopped spring onion

Boil some boneless chicken breast in some water with pepper and chicken bullion cubes. While that is boiling, cut up some potatos, carrots, and celery. Then when the chicken is cooked all the way though add the veggies. You can also add a bay leaf with they seasonings in the beginning, if you like that way it tastes. Enjoy, Yummo!
2 Cans Black beans (whole)
1/2 yellow onion (diced)
2 cloves garlic (diced)
1/2 can of tomato sauce
2 cups stock (any kind - chicken, beef, etc)
1/2 tsp coriander
1 tbls Cumin
olive oil
Sour Cream to garnish
Saute garlic and onion in olive oil until soft.
Add two cans rinsed black beans, tomato sauce and stock.
Let simmer for about 5 minutes
Add coriander and cumin / salt pepper, (whatever seasoning you like.)
Simmer for about another 5 minutes
Blend approximatley 1 cup of the soup in the blender and then pour back into the soup.
Serve with a dollop of sour cream on top.
It's delicious and takes hardly any time at all!
