Tuscany Tomato Soup
1/4 cup olive oil
4 tablespoons butter
4 carrots, peeled and finely diced
4 stalks celery, finely diced
3 medium onions, finely minced
3 (28-ounce) cans tomatoes with juice
1/2 cup finely chopped parsley
1/4 cup minced fresh basil
Salt and freshly ground black pepper
Heat the oil and butter in a large pot. Cook the carrots, celery, and onions for about 20 minutes, or until very tender.
Puree tomatoes in food processor or blender; add to the vegetable mixture in pot and continue cooking over medium heat for 25 to 30 minutes longer. Remove from heat. Stir in parsley and basil; season with salt and pepper. Serve.

She made a Tomato soup from scratch w/ fresh tomatoes that she roasted in the oven. It looked amazing! cheers
2 1/2 cups 1-inch French bread cubes (~2陆 slices)
olive oil flavored cooking spray
1 teaspoon olive oil
4 cloves garlic, crushed
2 (14 1/2 ounce) cans no-salt-added diced tomatoes, undrained
1 (14 1/2 ounce) can chicken broth, undiluted
1 tablespoon balsamic vinegar
1 1/2 teaspoons dried parsley flakes
1 teaspoon dried oregano
1/2 teaspoon pepper
4-5 teaspoons grated parmesan cheese
Arrange bread cubes in a single layer on a baking sheet and lightly coat bread with spray.
Bake at 400掳 about 10 minutes until dry and toasted.
Heat oil in large saucepan over medium-low heat.
Add garlic and saut茅 2 minutes.
Add tomatoes through pepper and bring to a boil.
Reduce heat and simmer 10 minutes, stirring occasionally.
Divide croutons among 4 or 5 bowls; ladle soup over croutons and sprinkle with cheese.

Several of you have requested the top-secret formulas for the popular new line of soups at Vons. Sorry to say, they are staying top-secret.
Not one to let a trifling thing like corporate protocol keep her down, local cooking instructor Edie Greenberg decided to take one of the soups and give it her own homemade touch. Vons' Tuscan Tomato %26amp; Basil Bisque was already tasty before Greenberg dipped her ladle into it, but it's downright delicious (and more healthful) with her addition of veggies. See for yourself.
Greenberg says if you have good knife skills, you can do the chopping by hand; otherwise, haul out your food processor and let it do the work. She also says to feel free to substitute any of your family's favorite veggies.
Vons' Tuscan Tomato %26amp; Basil Bisque a la Edie
4 servings
1 (25-ounce) container Vons' Signature Tuscan
Tomato %26amp; Basil Bisque (see note)
1 cup plum tomatoes, finely chopped
1/4 cup yellow bell pepper, finely chopped
1/2 cup zucchini, finely chopped
1/2 cup carrots, finely chopped
2 tablespoons fresh basil, minced
Creme fraiche, optional garnish
Fresh basil, slivered, for garnish
Empty contents of soup into a sauce pan. Add tomatoes, peppers, carrots and minced basil. Simmer, covered, 1/2 hour, or until carrots are tender.
Ladle into soup mugs. Dollop with creme fraiche, if desired, and sprinkle basil slivers on top.
Note: Vons' Signature soups are sold in the supermarket's deli section.
