What is a good vegetarian soup recipe?

I don't have a food processor and most of the recipes are asking for one so please don't post any recipes that require one.

VEGETARIAN LENTIL SOUP





1 lb. lentils (rinsed, picked over)


2 1/2 qts. water


1 c. medium barley


1 lg. onion, chopped


2 lg. ribs, celery with leaves chopped coarse


1 lg. carrot, diced


2 tbsp. parsley


1 (28 oz.) can crushed tomatoes


2 tsp. salt and pepper to taste





Place all ingredients in pot. Bring to boil. Reduce heat, cover and simmer 1 hour or until lentils and barley are tender. Stirring occasionally. Add more water if too thick. Makes about 4 quarts. May be frozen.





VEGETARIAN POTATO AND LEEK SOUP





4 - 5 organic Yukon potatoes


2 whole leeks


4 cups vegetable stock


1 tsp freshly ground nutmeg


freshly chopped chives (for garnish)


salt and pepper, to taste





Cube the potatoes and bring them to a boil in the stock.


When potatoes are almost finished, finely chop the leeks and saut茅 them a small amount of olive oil until they have softened and are sweet. Add leeks to potatoes. Cook for a few more minutes until potatoes are soft.





Add nutmeg, puree whole mixture in a blender or hand blender. Serve garnished with chives and a drizzle of olive oil.What is a good vegetarian soup recipe?
This recipe usually calls for chicken, but I sometimes make a batch with just veges:





';Chicken'; Tortilla Soup





1 box organic chicken or vegetable broth (if you can get ';mock chicken'; broth, go for it!)


1 15 oz can organic diced tomatos with garlic, peppers and onions


1/2 yellow onion, peeled and chopped


3 T olive oil


3 T cumin


1 T kosher salt


1 tsp fresh ground pepper


2 carrots, cut into 1/2 inch slices


1 large zuchinni, cut into 1/2 inch pieces


1 large crookneck squash, cut into 1/2 inch pieces


1 cup crimini mushrooms, sliced


1 large baking potato, cut into 1/2 inch chunks


1 2oz can diced green chili's (not jalapenos)


1 cup Pace picante or salsa, medium heat


The juice of 2 limes


1/2 cup sour cream


1 cup crushed tortilla chips





Saute onion in hot oil. Add veges and cook to brown for 1 minute. Add all ingrediants except for lime juice, sour cream and tortilla chips. Bring to a boil. Cover, reduce heat and simmer for 30 minutes. Add remaining ingrediants and season to taste.
This Slow Cooker Vegetable Soup is easy if you have a crockpot!
