Bell Pepper Soup
A delicious, colorful soup made with sweet peppers that can be served hot or cold.
Yield 4 servings
Time 1陆 hours
Tools
* large saucepan or Dutch oven
* wooden spoon
* blender or food processor
* small saucepan
Ingredients
* 录 c olive oil
* 1 small onion, chopped
* 4 large bell peppers (any color*), seeded and diced
* 1 medium potato
* 陆-1 t salt
* 1 t red pepper flakes
* 1陆-2 c vegetable stock
Directions Heat the olive oil in the large saucepan. Add the onion and saut茅 for 3-4 minutes.
Add remaining ingredients except the stock and bring to a simmer.
Cover, reduce heat, and simmer, stirring occasionally, until the peppers are tender, about 1 hour.
Pour half of the soup into the blender and pur茅e, followed by the other half. Meanwhile, put the stock in the small saucepan and bring to a simmer.
Optional: if you want a smoother soup, you can sieve it at this point.
Return the soup to the saucepan, stir in the stock (use more for a thinner soup), taste, and season.
Serve hot or cold, with any of these toppings:

VEGETARIAN POTATO AND LEEK SOUP
4 - 5 organic Yukon potatoes
2 whole leeks
4 cups vegetable stock
1 tsp freshly ground nutmeg
freshly chopped chives (for garnish)
salt and pepper, to taste
Cube the potatoes and bring them to a boil in the stock.
When potatoes are almost finished, finely chop the leeks and saut茅 them a small amount of olive oil until they have softened and are sweet. Add leeks to potatoes. Cook for a few more minutes until potatoes are soft.
Add nutmeg, puree whole mixture in a blender. Serve garnished with chives and a drizzle of olive oil.
VEGETARIAN VEGETABLE SOUP
2 c. diced potatoes
2 c. mixed vegetables
1 c. stewed tomatoes
Mrs. Dash's seasoning salt (to your taste)
Salt to taste
Pepper to taste
1/2 c. diced celery
1/2 c. diced onions (sm. boiling onions are good)
I buy frozen mixed vegetables, 1 bag is sufficient. I get carrot, cauliflower, broccoli mix. You may add whatever mixture of vegetables you like.
Boil until vegetables are done. I also added left over beef gravy for taste or 1 bouillon cube (beef). If you would like to add diced stew meat, brown first then add to vegetables and cook. I bring to boil and turn down to slow boil and cook 1 1/2 to 2 hours. Serve with salad and peas for dessert. Freezes well.
VEGETARIAN VEGETABLE SOUP
8 stalks celery, chopped, tops included
2 lg. onions, chopped
2 lg. cans tomatoes, broken up
Garlic powder to taste
Lawry's salt to taste
Lawry's pepper to taste
2 (16 to 20 oz.) bags frozen mixed vegetables
Combine first 6 ingredients with 1 quart water and simmer until celery and onion is about done. Add vegetables and more water, if desired, and simmer until vegetables reach desired doneness. Vegetable stock and add the vegetables of your choice. If you want tomato flavor, some tomato paste. If you want potatoes, cook them alone, and dice them in at the last minute and heat them up.. You can add noodles, beans, frozen or canned mixed vegetables. Add the seasonings you want, onion, salt, pepper
for quick and easy, use canned or frozen veggies, dried onions, use the liquid off the canned veggies in the soup. For slow, use fresh veggies, real onion.

Buy some orange lentils...put them in some warm water while you prepare the rest of the ingredients.
grate or finley chop an onion
finley chop or grate garlic(only if you want)
put two table spoons of olive oil in deep saucepan
add onion and garlic if used
then add lentils after draining them from the water they were in
stir mixture in low heat while adding water to cover mixture at least to the top of the saucepan but not too high so it wont boil over
Add some vegetable stock or instead of the water add liquid vegetable stock
Add some pepper and some all spice found at any store
Let it cook for at least 20 minutes (boiling) then when the lentils seem to melt and combine put on low heat for a further 10 minutes.
Taste in case you need to add more spice or salt/pepper

leek and potato soup. Boil the potatoes down in some water to make the soup base until you have a sort of cream of potato texture and add the finely chopped leeks to it. You can season with onions and maybe some pepper and other stuff. Add some milk for a more creamy soup, unless you're vegan. It's pretty simple and really good if you do it right.
red pepper, brocolli, tinned sweetcorn and cheese soup.
fry veg in little oil. not corn, stir in flour, add pint of milk pint of veg stock and bring to boil and simmer for 20 mins. add corn and simmer for another 5. you can freeze in portions. add grated cheese on serving.
you can add cubed potatoes, onions and garlic if you wish
