Does any one have a nice basic vegtable soup recipe?

i checked the internet and couldnt find anything. i am looking for a basic recipe with just the basic vegtables.Does any one have a nice basic vegtable soup recipe?
INGREDIENTS





* 1 (14 ounce) can chicken broth


* 1 (11.5 ounce) can tomato-vegetable juice cocktail


* 1 cup water


* 1 large potato, diced


* 2 carrots, sliced


* 2 stalks celery, diced


* 1 (14.5 ounce) can diced tomatoes


* 1 cup chopped fresh green beans


* 1 cup fresh corn kernels


* salt and pepper to taste


* Creole seasoning to taste





DIRECTIONS





1. In a large stock pot, combine broth, tomato juice, water, potatoes, carrots, celery, undrained chopped tomatoes, green beans, and corn. Season with salt, pepper and Creole seasoning. Bring to a boil and simmer for 30 minutes or until all vegetables are tender.

Vegetable Soup and Bread


Serves 6


1 small onion, rough chopped


2 small carrots, rough chopped


2 cloves garlic


2 tablespoons extra virgin olive oil


2 teaspoons chopped fresh thyme


2 teaspoons chopped fresh oregano


1 teaspoon chopped fresh rosemary


8 cups chicken or vegetable stock


2 cups diced butternut squash


2 medium potatoes, cubed


3 cups julienne Swiss chard, washed and spun dry


Salt and cracked black pepper





6 slices French bread about 1/2 inch thick


Olive oil


2 cloves garlic


1/3 cup grated Parmesan cheese





Place the onion, carrot, garlic in the bowl of a food processor and process until chopped. Or just chop yourself. Heat a large stock pot with olive oil add the vegetables and place a lid on the pot. Cook until the vegetables are tender. Add the herbs, stock, squash, and potatoes and cook over medium heat until the potatoes are tender about 10 minutes. Add the Swiss chard and cook just until wilted. Season with salt and black pepper.





While the soup is cooking, place the bread on a sheet pan and drizzle with olive oil. Place in the oven and cook until golden brown about 12 minutes. Remove from the oven and rub with garlic. Place the bread in the bowls and top with cheese. Add the soup and serve warm.
This is my most favorite meal.





I usually take a brisket or roast and put it in a big pan of water with salt and bake in the oven all night at 350. or boil for many hours on top of the stove. (meat with a little fat leaves a nice flavor in the broth)





Remove the meat, bring broth to boil, add chopped (bite size) potatoes, celery, onions, canned carrots, cabbage chopped up.





Boil until vegetables are tender, add canned diced tomatoes, and a large can of tomato juice. Turn off heat as soon as tomatoes are added. chop meat and return to soup.





The amount of veggies depends on how big of a pot you want to make.
Actually believe it or not you can just get together lots of different vegetable (i.e. canned peas, mixed vegetables, etc) that you like and mix them together in a pot just let 'em cook and it is very good I also agree with the other guys though Cambells is delicious, easy, and they have a wide variety of things to choose from.

Boil boxed chicken broth and add your choice of frozen veggies (potatoes r good non frozen) if u put in regular potatoes wait until they are almost done and then add the frozens
