I'm on a very tight budget and need a great CHEAP recipe for Minestrone Soup. I prefer Vegan...but go ahead and give me whatever recipe, I can always modify it.Any good CHEAP Minestrone Soup Recipes??
First you need to make a vegetable stock:
water, onions, carrots, celery, bay leaves, etc.
You can break up spaghetti for the fine noodles.
Add spinach or any leafy greens that you like.
A few canned beans or pre-soaked dried beans.
Assorted frozen veggies: peas, carrots, corn, etc.
Some chopped tomato is also good.Any good CHEAP Minestrone Soup Recipes??
you could just use vegetable stock and add a bunch of veggies that you like. use canned stuff where you can't get fresh (rinse first so they're not to salty!) and throw in beans for some protein. you can season as needed for your tastes, but that's really the basics of it.
It just isn't minestrone without the italian sausage. It's vegetable soup.
