BROCCOLI AND CHEESE SOUP:





Ingredients


3 tablespoons butter


1 medium sweet onion, diced


3/4 cup shredded carrot


1 teaspoon chopped garlic


2 lbs frozen broccoli, pieces


3 tablespoons chicken base, with 9 cups water or 9 cups chicken stock


1/2 teaspoon salt


1/4 teaspoon pepper


1 1/4 cups 2% low-fat milk


8 ounces Velveeta reduced fat cheese product, cubed


2 tablespoons flour


1/2 cup flour





Directions


1 Saute onion and carrots in butter until softened, add garlic and stir. Sprinkle 2 tablespoons of flour over sauteed veggies and let cook for a minute to get rid of the flour taste.


2 Add chicken base and water (or chicken stock) and bring to a simmer.


3 Add broccoli pieces and cook until desired tenderness. Add cubed pieces of Velveeta and stir until melted. Stir in milk.


4 Combine remaining 1/2 cup flour with enough water to make a slurrey and stir into simmering soup to thicken.


5Salt and pepper to taste, above amounts of salt and pepper are approximate! Makes 10 2-cup servings!





Other version:


CHEESE AND BROCCOLI SOUP:





Ingredients


1 quart water


1 (16 ounce) package chopped broccoli


1 cup chopped onion


1 (10 1/2 ounce) can cream of celery soup


1 (10 1/2 ounce) can cheddar cheese soup


1 (16 ounce) package Velveeta cheese, cubed


1 teaspoon paprika


1/2 teaspoon crushed red pepper flakes (or to taste)





Directions


1 Combine water, onion and broccoli in large saucepan over medium heat. Bring to boil.


2 Cook broccoli until tender.


3 add remaining ingredients, stir until cheese is melted.








CHICKEN NOODLE SOUP:





Ingredients


2 quarts chicken broth or water (If using canned chicken broth, use low sodium)


8 ounces amish noodles (Comes in a 12oz. package, can be found at walmart.If you can't find you can use egg noodles.)


1 (10 ounce) can cream of chicken soup


1 (10 ounce) can cream of celery soup


1 (12 ounce) can canned chicken breast meat, chunks (or use cooked chicken breast)


8 ounces Velveeta cheese, cut into cubes


salt and pepper





Directions





1 Bring broth or water to a boil add noodles and cook according to package directions,or til bite tender.Do Not drain.Reduce heat to medium low. Add soups and stir well. Add chicken and cubed velveeta. When cheese melts taste and add salt and pepper.Serve.
The BEST Baked Potato Soup Ever!


This really is the best baked potato soup I have ever tasted.

SERVES 4 -6





2 large potatoes


3 tablespoons butter


1 cup diced white onion


1 teaspoon garlic powder


2 tablespoons flour


4 cups chicken broth


2 cups water


1/4 cup cornstarch


1 cup instant mashed potatoes


1 teaspoon salt


3/4 teaspoon pepper


1/2 teaspoon basil


1/8 teaspoon thyme


1 cup heavy whipping cream or half-and-half





GARNISH


1/2 cup velveta cheese (or cheddar cheese)


1 cup crumbled cooked bacon


2 chopped green onion (green part only)





Directions:


Wash potatoes thoroughly and microwave until tender.


If you would like you can always bake in a 400 degree oven for one hour or until done.


As the potatoes are cooling, melt your butter in a large saucepan and saute your onions with garlic powder until light brown.


Add in your flour to make a roux. Cook this on low heat for about 10 minutes, stirring often.


Add in your chicken broth, water, cornstarch, instant mashed potatoes and spices and bring to a boil.


Reduce your heat and simmer for about 5 minutes.


Take your cooled potatoes and peel off the skin and chop up into desired pieces.


Add in your chopped up potatoes and the heavy whipping cream to your soup and bring it back to a boil.


Reduce heat and simmer for about 15 minutes or until it is thick.


Garnish with cheese, crumbled bacon and green onions.


You can also add more velveta to soup as it simmers for a cheesy potato soup.(umm so good)


This recipe can easily be doubled. This is what I do cause it is so good my family wants left overs.

Brown 1 1/2 lbs of ground beef or sausage %26amp; drain well. In crockpot, add meat, 1 large block of Velveeta mild mexican cheese - cut into cubes, 1 can of Rotel chilis %26amp; tomatos %26amp; a few tablespoons of your favorite salsa. Cook on low til all melts together, stirring every so often. I serve with tortilla chips, sour cream %26amp; guacamole.........Yummy!





This is also a great dish to take to holiday parties as a dip or a soup.
Add a couple of slices to your regular potato soup!
