Do you have a good chicken soup recipe?

I just made chicken stock for another dish but would like to use the rest of the stock in soup...Do you have a good chicken soup recipe?
EASY CHICKEN SOUP





2 packets dry chicken noodle soup mix


2 litres water


left over cooked chicken, (about 1/4 lb) diced


1 small onion, diced


1 medium potato, diced


4 sticks celery, diced


2 small or 1 large carrot - diced


salt and pepper, to taste


1 tablespoon vegetable oil





Heat oil in a large soup pot and stir fry onion. Do not brown. Add other vegetables and chicken and stir fry for a few minutes.


Cover with water and add chicken noodle soup mix.





Allow to simmer for 20 or so minutes until vegetables are tender. Serve in big bowls with warm crusty bread rolls.





Serves 6-8

In large pot,place one whole soup chicken,with a cup of minced onion,1/2 cup minced celery,1/2 cup chopped fresh parsley.Cover with your stock.Bring to boil,cut down to fast simmer and cook for 1 1/2 hours.Remove chicken,set aside to cool .Add 1cup chopped carrots,cook approx. 10 minutes,until carrots are just tender.Add cooked noodles,alphabets,or rice.Bone chicken and add meat to pot.Salt and pepper to taste.Serve with grated fresh Parmesan cheese.
Stock can be frozen if you need to keep it for a bit of time.





Chicken soup one:


use your stock and add chopped up pieces of cooked chicken, carrots, cooked rice, and canned diced tomatoes. I season with one half a pkg of good seasonings dry italian dressing mix.


you can use regular italian seasoning and garlic instead.





Another version of good chicken soup is dumplins:


broth, cooked bits of chicken, and peas. season with S%26amp;P, basil and garlic. Make up a batch of biscuit dough and plop spoonfuls into the simmering liquid one at a time. Spoon liquid over the dumplins and cover for a few moments to help them cook. Make sure it doen't boil too hard.


To really do this right, serve in bowl, with a boiled egg cut up over the top, and sprinkle with pepper. Awesome when it's cold.
THAI CHICKEN SOUP





Make any chicken soup recipe you like and add Lemongrass you can find in any Asian market. Cook the soup with Lemongrass which will give your soup a lemony exotic flavor. Then add a can of Coconut Milk, some chopped cilantro and a hot pepper or two.


Delicious and exotic from simple chicken soup!
