shrimp bisque
Yummy with bread!
INGREDIENTS
2 tablespoons olive oil
1 teaspoon minced onion
1 teaspoon minced green onion
1 teaspoon minced garlic
1 teaspoon minced celery
1 teaspoon minced green bell pepper
2 tablespoons shrimp stock or water
1 (6 ounce) can crab meat, drained
2 tablespoons bread crumbs
1 teaspoon Cajun seasoning
Heat 2 tablespoons olive oil in a large skillet. Saute onion, green onion, garlic, celery, and green pepper until tender. Stir in shrimp stock, crab meat, bread crumbs, and Cajun seasoning. remove in 2-5 minutes. Spread on bread or crackers and enjoy!
If I have it, this is what I do:
Saute on medium heat, some chopped garlic and shallots in a couple of drizzles of olive oil and a 1/4 stick of butter, until softened, about 3 minutes.
Add 1 cup of your shrimp stock and 1 cup dry white wine.
If you like a touch of heat, sprinkle in about 1/2 tbsp of crushed red pepper flakes. Bring to a boil and reduce liquid by half.
Toss in some raw, cleaned shrimp, some bay scallops (about 1 cup each) and some chopped aparagus. (or snow peas, or peas).
Add about 2 tsp each of chopped basil, thyme and parsley.
simmer until shrimp are pink, about 5 minutes.
Toss over cooked pasta, and top with a little freshly squeezed lemon juice and freshly grated Parmesan cheese.
Serve with some crusty bread and a nice green salad.
