Does any one have a good soup recipe, that includes hominy?

Please, nothing nasty like menudo or tripe or gross things. Some thing simple that does not have pork or potatoes. The only considered meates are beef or chicken. No legs, wings or thighs.Does any one have a good soup recipe, that includes hominy?
This recipe sounded really good to me:





Beefy Bean and Hominy Soup:





1/2 lb ground beef


2 cloves garlic, finely chopped


1 medium onion, finely chopped


2 tablespoons fresh parsley, finely chopped


1 tablespoon cilantro, finely chopped


1/2 teaspoon dried thyme


4 cups beef broth


16 ounces canned pinto beans, rinsed and drained


16 ounces hominy, rinsed and drained


salt and pepper, to taste


onions, sliced thin,to garnish


jalapenos, sliced thin,to garnish


fresh cilantro, finely chopped,to garnish





Brown the ground round in lightly greased skillet.


Add the garlic and onion and cook until the onion is lightly browned.


Mix in the parsley, cilantro, and thyme.


Transfer the beef mixture to a soup pot.


Add the beef broth, pinto beans, hominy, salt and pepper.


Bring mixture to a boil; reduce the heat and simmer for 30 minutes.


Serve with the garnishes.Does any one have a good soup recipe, that includes hominy?
Oops, there goes my suggestion! Gurl, u r missing out on posole! My mom used pork butt, instead of those ';gross'; things. yum-o!

Hey there girl you should try Cajun Gumbo its usualy made with smoked sausage and rice in it but I've subed beef and homony and its to die for spice for taste on the heat some like it hot some don't,you can get the gumbo recipe off of recipes.com try it you will love it.....: )
Brown ground meat with i chopped medium onion and 2 minced garlic cloves. Drain and season with salt %26amp; pepper to taste. Mix in 1 to 2 (or more if you like) red chili powder, 1 teaspoon dried oregano,1 can of Rotel green chilies and tomatoes (or diced tomatoes and small can of green chilies), 8 ounces of beer or water, 1 teaspoon beef bouillion, and 1 can of hominy. Bring to a boil, reduce heat and simmer aboutl 20 to 30 minutes. Serve with crushed tortilla chips and grated cheddar cheese on top.
You should look up a recipe for shrimp posole... mmmmmm.
