Well Kendra, or Bob or whatever your name is!! lol.. I have a family recipe! i will share it with you!! First get a coconut and chicken leg from KFC Kentucky fried chicken. YOU DONT HAVE TO GO TO KENTUCKY! anyway get a big big bowl normally used for popcorn. Put the coconut juice in it and put the chicken in with no bones. with great force slam it into your TV and it gets its kicks. You will hear it pop if you did it right. Chinese Stock and Soups Recipes - Chicken and Coconut Soup Recipe
Ingredients
350 g/12 oz chicken breast
salt
10 ml/2 tsp corn-flour (cornstarch)
30 ml/2 tbsp groundnut (peanut) oil
1 green chili pepper, chopped
4 1/4 cups coconut milk
5 ml/1 tsp grated lemon rind
12 lychees
pinch of grated nutmeg
salt and freshly ground pepper
2 lemon balm leaves

Method:
Cut the chicken breast diagonally across the grain into strips. Sprinkle with salt and coat with corn-flour.
Heat 10 ml/2 tsp of oil in a wok, swirl round and pour it out. Repeat once more.
Heat the remaining oil and stir-fry the chicken and chili pepper for 1 minute.
Add the coconut milk and bring to the boil. Add the lemon rind and simmer for 5 minutes. Add the lychees, season with nutmeg, salt and pepper and serve garnished with lemon balm.
I'm not familiar with a Cantonese recipe but I know a great thai recipe for Tom Kha Gai or Chicken Coconut Soup.
Ingredients:
Boneless Chicken Breast - 1 lb
Galanga or Siamese ginger
Kaffir Lime Leaves or lime peel
Lemongrass
Thai Chilis
Cilantro
Chives or chopped green onion
Soy Sauce
1 can of Coconut Milk
a few cups of water
I would sautee the chilis, lemongrass and galanga lightly in sesame oil and then add the chicken, sauteeing for a few more minutes. I would then add the water, coconut milk, soy sauce to taste and kaffir lime leaves, letting them cook together for at least 15 minutes. Then, add the cilantro and chives to finish the dish. A little chili oil over the top would be nice to finish as well.
Again, this is a thai recipe but very good. Not sure about Cantonese...
